Balsamic couscous

Serves 4
1 c couscous
1 c boiling veg broth
3T olive oil
2 cloves minced garlic
1/2 red bell pepper, diced
1/2 onion chopped
1 c cherry tomatoes, halved
2 stalks celery, chopped
1 crown broccoli, cut into small pieces
dash oregano
dash balsamic vinegar
1 t basil
*add season veggies

Add couscous to boiling water, remove from heat.  Let stand 5 min, fluff with fork.
Saute garlic, onion, pepper celery.  Stir in other ingredients, adding tomatoes and vinegar last.  Cook through.
