Lemon Cranberry Muffins

2 c flour
2/3 c sugar
3 t baking powder
1/2 t salt
2 eggs/replacer
1 c milk
1/2 c applesauce
1 t lemon extract
3/4 c cranberries

Mix dry ingredients, mix wet; combine.  Fold in cranberries.  Fill greased muffin tins and bake at 400 for 18-20 min.
