Lime Rice

Serves 4-6

We like to use this for tacos, you know, the Cafe Rio kind.

1 T butter
1/2 onion, chopped
2 cloves garlic, minced
2 c. water
2 t vegetable boullion
1/4 bunch chopped cilantro
2 t cumin
1 small can green chilies
1/2 T lime juice
1 1/2 c rice

Saute onion and garlic in butter.  Add remaining ingredients.  Boil; simmer till rice is tender.
